Sanguisorba minor (Burnet)

This herb is valued for its fresh, cucumber-like flavor and is often used in salads.

The flowers of salad burnet are small, rounded, and not particularly showy. They appear in dense, globular clusters on slender stems above the foliage.

Salad burnet thrives in full sun but can tolerate partial shade, especially in hotter climates. Is drought-tolerant once established. The plant is easy to grow and handle, requiring minimal maintenance. It can be pruned back after flowering to maintain its shape and encourage new growth.
