Winter savory is a small, evergreen shrub. It has slender, dark green leaves that are narrow and pointed, growing densely along woody stems. The plant produces small, white to pale pink flowers that bloom in clusters.
The leaves of winter savory are highly aromatic, with a strong, spicy fragrance reminiscent of thyme and oregano. The taste is pungent and peppery, adding a robust flavor to dishes.
This herb prefers well-drained soil and full sun. It is drought-tolerant once established and does well in rocky or poor soils. In gardening, winter savory is often grown alongside beans and other legumes to deter pests and enhance growth.
